Fresh spring rolls (Nem cuon)
In front of school gates, by the side of the road and near markets, you will find vendors selling fresh spring rolls. The vendors piles herbs, lettuce, shrimp, vermicelli, a slice of pork and shredded pork dusted in grilled powder on a round of floppy rice paper, then rolls the rice paper into the neat tube.
In the South, people usually boiled shrimp while Northerners prefer shrimp paste. The rolls are always served with fish sauce and make the perfect light snack on a hot day. They're cheap as well as delicious, costing only VND1,000 per roll.
The one drawback is that eating fresh spring rolls requires some concentration, as they are prone to falling apart. Grip the roll at the end which contains the shrimp and enjoy this healthy and flavour snack. |
